Les cuisiniers modernes suivent encore la vieille recette centenaire, venant des Arabes et des Normands. Ces premiers y ont emmen\u00e9 le risotto au safran, et les derniers \u00e9taient ceux qui donnaient une forme d\u2019orange aux boulettes de riz.<\/p>\n\n\n\n<p>Le secret d\u2019une <em>arancina <\/em>parfaite ? Les grains de riz doivent \u00eatre cuits <em>al dente<\/em> (vous devez sentir chaque grain lorsque vous croquez) ! D\u2019apr\u00e8s la l\u00e9gende, les nonnes auraient modifi\u00e9 une ancienne recette orientale de ce dessert qui \u00e9tait originellement pr\u00e9par\u00e9 par le harem pour le sultan local. La p\u00e2te croustillante est garnie de ricotta cr\u00e9meuse, de p\u00e9pites de chocolat et de petits copeaux d\u2019oranges confites. Les grecs ont emmen\u00e9 la ricotta et les Arabes le <em>quas\u2019at, <\/em>un grand plat rond dans lequel la <em>cassata<\/em> est pr\u00e9par\u00e9e. Lorsque les Espagnols ont colonis\u00e9 la Sicile, ils ont pr\u00e9par\u00e9 ce g\u00e2teau en y ajoutant des fruits confits et en le d\u00e9corant dans un style baroque, tout comme ils l&#8217;ont fait avec l\u2019architecture locale.<\/p>\n\n\n\n<p>Br\u00fblez toutes ces calories en visitant le Castello di Pietrarossa. Bien qu\u2019il soit dans un \u00e9tat de d\u00e9labrement, c\u2019est un des ch\u00e2teaux les plus importants de la Sicile gr\u00e2ce \u00e0 son emplacement au sommet d\u2019une colline, ce qui offre une vue spectaculaire sur les environs. Le th\u00e9\u00e2tre est li\u00e9 \u00e0 jamais au compositeur local Vincenzo Bellini, qui est lui-m\u00eame \u00e9ternellement li\u00e9 aux plus populaires des p\u00e2tes siciliennes : <em>Pasta alla Norma<\/em>.<\/p>\n\n\n\n<p>Le th\u00e9\u00e2tre a ouvert ses portes en 1890 avec l\u2019op\u00e9ra <em>Norma <\/em>de Bellini, et, d\u2019apr\u00e8s la l\u00e9gende, un chef cuisinier sicilien a cr\u00e9\u00e9 un plat pour l\u2019occasion, s\u2019inspirant probablement du soprano Giuditta Pasta, qui \u00e9tait le personnage principal tragique de l\u2019op\u00e9ra.<\/p>\n\n\n\n<p><em>Pasta alla Norma <\/em>est un pilier de la cuisine sicilienne. Seulement quelques ingr\u00e9dients sont n\u00e9cessaires : du basilic frais, de l\u2019ail, des tomates m\u00fbries sur pied, des aubergines frites et bien dor\u00e9es, et de la ricotta sal\u00e9e r\u00e2p\u00e9e.
